2018 PEIXOTO PROCESS SERIES
Year after year, we have been adding different ways of processing coffee to our coffee line-up. Last year we experimented with honey, and this year we have added washed. We are now showcasing the same coffee processed 3 different ways so coffee drinkers can taste what the processing does to the coffee and how the complexities and certain notes can be awakened by post-harvest processing. Enjoy the same coffee, 4oz of each – one natural (cherries were dried under the sun), one honey (skin was removed, depulped, and the seeds dried under the sun with honey – aka mucilage – around it), and one washed (after depulping seeds are immersed in water for a certain period of time, water breaks the mucilage, seeds are dried under the sun thereafter). This series offers a great way to taste the Peixoto 2018 Harvest.
