This is our first purchase from our friends Steve and Ashenafi of Unravel Coffee Merchants, and we couldn’t be more excited.

Unravel has a unique business model where both the exporting and importing are directly intertwined, which allows them to have a much more hands on approach to their coffees. Ashenafi works year-round in Ethiopia and works with each of the mills to ensure the processing and cherry selection is perfect. Steve works state side, giving importing QC reports back to Ashenafi and communicates the roasters needs and concerns back. This allows them to quickly implement innovative new processing techniques to their coffees. On top of that they work hard to build up their communities, even helping to build a new school in one of the regions.

Let fully drain should be between 1:15-1:30

Third pour

1:15 – 1:30

Pour from 200 grams to 350 grams, starting at 1:15-1:30 and ending your pour at 1:35-1:50 (7.5 gram per second, pour rate)

Let drain completely

Final time

Drain should end between 2:25 – 2:45 minutes or brew to taste

We love this coffee on espresso; it has a ton of sweetness, and body even at these higher 3:1 ratios. We are getting bright orange and complex berry notes up front followed by dried fruit and dark chocolate to round it all out.
