Our Roasting Philosophy

To ensure we are highlighting the producers hard work through careful and thoughtful roasting.



Our Goal


We believe our job as roasters is to bring transparency to what the producer has created. Whether their intention was to highlight the coffee varietal or a specific processing technique – we do our best to bring clarity and balance to your cup with the highest level of consistency.


In practice


To achieve this goal:

  • We roast our coffees thoughtfully and tailor a roast profile for each individual coffee.
  • We built a robust system around quality control and recipe creation to ensure we are roasting the coffee to its highest potential.
  • We created a culture at the roastery around being producer first – we work diligently to present their coffee the best possible.
  • We modified our roaster with custom hardware to give us the control necessary to bring the most out of the coffee.
  • We wrote our own software to best communicate with our custom hardware to ensure the upmost consistency.

The Results


Our roasting style creates coffees with strong clarity of flavor, that are acidity forward but balanced with sweetness, that have solid flavor structure, and that are terroir/processing forward.

To ensure they keep tasting this way, we taste our coffees everyday of the week looking for what we consider roast defects or changes in flavor profile. This guarantees that nothing gets out of the roastery that doesn’t meet our standards.

Through this process we are also constantly improving our coffees. We have a large archive of every coffee that we have roasted and our team of roasters are always taking note of when something has tasted great in the past. Then, when a new coffee arrives that can be roasted similar to another, we have had in the past we get to start with that strong foundation in place. Creating a virtuous loop of constant growth and improvement.
